Story

Lying in the Cederberg Wilderness Area, this award-winning winery is owned by David Nieuwoudt, who represents the fifth generation of the Nieuwoudt family. Emma, David's daughter, represents the sixth.

Tasting Notes

Pair this  cool-climate Chenin Blanc with the aria "Largo al factotum" from Rossini's The Barber of Seville. The aria’s lively, buoyant energy and quick tempo perfectly complements the wine's refreshing, mouth filling style that leaps from the glass with green melon, cut Granny Smith apple, juicy pear, granadilla (passion fruit) and fresh herbs. This deliciously refreshing palate with all the fruit nuances kept in check by the classic Chenin acidity, matches the aria's playful and dynamic character. This explosion of sound and taste invites you to take sip after sip!

Food Pairing

This wine will be well suited to creamy dishes such as a rich and creamy tomato soup, light and fragrant curries, or citrus dominated salads. Chevin Goats cheese is an ideal complement.

Wine Makers Note

Grapes are hand-harvested in the early morning. The winemaking process is donewith the use of dry ice and carbon dioxide. Grapes are crushed at 8°C with approximately five to eight hours of skin contact before a light pressing. Two days of juice settling is followed by racking and the addition of selected yeast. Fermentation is done at 11°C for approximately 24 days. Finally, the wine is further matured on its fine lees for an additional four months with a monthly bâtonnage before the final blending and bottling.
