Story

The Cederberg winery has been running for six generations in the Nieuwoudt family. No one would have guessed that the Cederberg with it’s rugged, and fynbos-covered terrain on the edge of the Succulent Karoo biome would one day become an excellent high altitude wine farm in the Cape Winelands.

Pair this sophisticated Cederberg Sustainable Dry Rosé with the aria "Porgi amor" from Mozart’s, Le Nozze di Figaro. The aria’s tender, romantic melody and graceful expression beautifully complements the wine's delicate aromas of strawberry mousse, rose petals, and nectarines, whilst its refined elegance resonates with the refreshing palate and savoury finish. Wine Makers Note

Shiraz grapes are hand-harvested in the early morning and crushed at 8° C with approximately eight hours plus skin contact before light pressing. Two days of juice settling are followed by racking and the addition of selected yeast. Fermentation is at 11° C for approximately 24 days. The wine matures on fine lees before final blending and bottling.
